RUN FOR THE BORDER

This could potentially be a bad idea, starting a blog about Nachos the summer before our wedding, but that just goes to show how much we love this delicious Tex-Mex snack and how we appreciate the many ways it comes.

SOME HISTORY

Nachos, or "Chos" as we will frequently refer to them as, were created in 1943 by Ignacio "Nacho" Anaya in the small border town of Piedras Negras, Coahuila, Mexico. One day in 1943, the wives of ten to twelve U.S. soldiers stationed at Fort Duncan just over the border, arrived at the restaurant after it had closed for the day. The maitre d' Ignacio "Nacho" Anaya had to improvise with the little that he had available in the kitchen: tortillas and cheese. Anaya cut the tortillas into triangles, added cheddar cheese, quickly heated them, and added sliced jalapeño peppers. He served the dish, calling it nachos especiales, or "special nachos."
